Brief description of the course
Contemporary nutrition and dietary recommendations. Factors influencing nutritional behaviour. Nutritional and energetic value of food and the factors determining it. Effects of nutrients on the body. Sources of nutrients in food, food selection criteria. General characterisation of food products. Quality of food and the factors influencing it. Production, properties and consumption of basic food products. Comparison of the nutritional composition of foods. Food recommendations. Composition and analysis of menus.
Learning outcomes in the course
Upon completing the course the student:
- knows basic rules of nutrition;
- evaluates nutritional value of food and makes balanced menu;
- knows general characterisation of food products and their nutritional composition.
