Course aims
To deepen the knowledge about food preparation. To introduce the food preserving methods.
Brief description of the course
The physico-chemical, bio-chemical and microbiological processes of food preserving. The basic preservation methods of food. The choice of methods, depending on the products.
Learning outcomes in the course
Upon completing the course the student:
- knows basic preservation methods
- knows how to choose a suitable preservation methods according to foodstuff
- understands the processes that take place in the food preservation
