Course aims
Major. To give a deep handle of different foor perparation techniques. In the course the main preserving techniques are introduced and more attention will be turned to baking.
Brief description of the course
Preserving food- chemical, biochemical and microbiological processes. Main techniques in food preserving, both sweet and savoury. Choice of methods according to raw material. Main type of pastries and products of them. Products from deduced pastries. Cooling and storing of cakes and bakery. Serving ideas for bakery.
Learning outcomes in the course
Upon completing the course the student:
Knows main techniques in food preserving;
Can choose the methods according to raw material; knows main type of pastries and products of them.
