Course aims
To give overview about factors that influence contemporary eating habits. To analyze nutrition trends and novel foods. To explore different food cultures and customs to form the independent working skills.
Brief description of the course
Social and psychological factors affecting eating habits. Food from ancient times to the present day, Food in different cultures. Development of food technology. Novel food. Genetically modified food. Functional food. Fast food: general overview, nutritional facts. Ready made food. The general overview of different food cultures: eating habits, traditional food and food preparation. Future patterns of food choice.
Learning outcomes in the course
Upon completing the course the student:
- knows factors that influence eating habits;
- knows novel foodstuffs and how to use them in food preparation;
- analyses the role of food technology development;
- understands the food cultures around the world.
