Course aims
- To give an overview about the cultural and historical background of food.
- Develop an understanding of the impact of equipment and technology developments in the food sector.
Brief description of the course
Food from ancient times to the present day. The origin of food products, food journeys. Introduction of equipment and tools and their impact on food culture. Technological development of foodstuffs. Cooking before and now. Development of cafeterias and restaurants. History of food brands and food advertising. Beverage culture through history. Food traditions.
Learning outcomes in the course
Upon completing the course the student:
- knows the history of different food and themes related to it;
- is able to analyse the importance of developments in food technology.
Additional information
Working with literature, keeping a lecture diary, small tasks/presentations about certain themes.
