Course aims
Major. To acquire basic knowledge in food safety, the formation of skills for the correct treatment of food, and the development of a systematic theoretical approach. This subject supplements the Fundamentals of Nutrition and Cooking Technology courses with food safety aspects.
Brief description of the course
Factors determining food safety. Contaminants and pollutants in food. Food additives. General characterisation and growth-favouring factors of micro-organisms. Hygiene criteria in food preparation and preservation. Dish-washing materials. Hygiene criteria in kitchen areas. Disinfection methods and tools. Composition of didactic materials. Food-borne diseases. Food poisoning and infections and activities for avoiding them.
Learning outcomes in the course
Upon completing the course the student:
Knows basic knowledge in food safety, can evaluate factors that determine food safety;
Knows the correct treatment of food.
