Course aims
To give an overview about factors that influence contemporary eating habits. To analyze food and nutrition trends and novel foods. To explore different aspects related to consumption of food.
Brief description of the course
Social and psychological factors affecting eating habits. Food from ancient times to the present day, Food in different cultures. Development of food technology. Novel food. Genetically modified food. Functional food. Fast food: general overview, nutritional facts. Ready made food. Special diets. Future patterns of food choice.
Learning outcomes in the course
Upon completing the course the student:
- knows factors that influence eating habits;
- knows novel foodstuffs and how to use them;
- is able to draw up a special menu;
- is able to assess the risks associated with diet.
